Kismis, or raisins, are dried grapes. The process of making kismis involves harvesting ripe grapes, followed by a drying method, either sun-drying or mechanical dehydration. Sun-drying is a traditional method where grapes are laid out on drying trays or mats under direct sunlight for several days, turning them periodically to ensure even drying. Mechanical dehydration uses controlled heat and airflow in dehydrators to speed up the process. Once dried to the desired moisture content, the kismis are cleaned, sorted, and packaged for distribution. This drying process concentrates the natural sugars in the grapes, giving kismis their characteristic sweet flavor and chewy texture.
